#11 Rack of Lamb: Rack of Lamb with Orange Marmalade
Prep Time: 25 min. Cook Time: 20 Min. Ready In: 45 Min. Serves 4
Ingredients
• 1 Each of Lamb
• ½ Cup Olive Oil
• ½ tsp. Garlic Salt
• ½ tsp. Dried Leaf Thyme
• ½ Cup Dried Rosemary
• ½ Cup Orange Juice
• ½ Cup Orange Marmalade
• 2 Tbsp. Lemon Juice
• Dash White Pepper
• 2 Tbsp. Butter
Directions
1. Preheat oven to 475°F.
2. Prepare spiced oil blend in small bowl and then liberally coat the meat.
3. In a saucepan, blend orange and lemon juice, marmalade, salt and white pepper. Simmer for 15 minutes. Add butter and keep warm on very low heat.
4. Heat olive oil in frying pan; brown racks for 2 minutes on each side until medium brown. Place racks in baking dish and bake for 12-14 minutes (medium rare). Remove racks, let rest for 10 minutes. Cut into individual chops and serve with glaze.
